I am sorry I haven’t posted in awhile…I have been busy with work things and Valentine’s Day weekend. The good news is I have been cooking up a storm, so many post to come! Thursday night I made a recipe called Moo Shu Chicken, which is a very simple, fast and tasty meal. I got this recipe from my mom awhile ago so I am unsure of where it’s from. B really enjoyed this recipe as well but she wanted to try it on rice the next time we make it.
Moo Shu Chicken
Serves 4 Active: 2 min/ Total 10 min.
1 Tbsp. dark Oriental sesame oil
6 scallions, sliced
1 tsp. chopped garlic
1 bag (16 oz.) Coleslaw mix
10 oz cooked chicken, cut in small cubes
1/3 cup bottled hoisin sauce
2 tbsp lite soy sauce
1 package (10 oz) 6 in. flour tortillas (8 in package)
1.) Heat sesame oil in a large skillet over medium-high heat. Add scallions, garlic and coleslaw mix; sauté 3 minutes. Add chicken, hoisin and soy sauce, cook 1 minutes until hot; remove from heat.
2.) Meanwhile, place tortillas between damp paper towels. Warm in microwave as package directs/ Spoon ½ cup chicken mixture on each tortilla and roll up.
