I originally was going to title this post “French Toast Post” instead of “Baked French Toast” – it’s clear that I have been reading a little too much Dr. Seuss to my son lately. Anyway, I wanted to share this lovely recipe for Baked French Toast. If you are cooking breakfast tomorrow for that favorite dad in your life, you could prepare this ahead of time tonight and just pop it in the oven tomorrow morning to cook. Baked French Toast is also the perfect way to incorporate the abundance of fresh berries in season right now.
This Baked French Toast recipe makes about 10 servings. We had it for breakfast for a few days in a row and then I cut it into small pieces and froze the rest. My son loves French Toast for breakfast so I just reheat it the microwave for him on occasional mornings. The berries and crumb topping are so tasty and sweet that I don’t think it requires any maple syrup on top.

Recipe:
- Cooking spray
- 1 loaf sourdough bread (or another type of crusty bread)
- 8 eggs
- 2 cups milk
- ¾ cups sugar
- 2 tablespoons vanilla extract
- ½ cup flour
- ½ cup dark brown sugar
- 1 teaspoon cinnamon
- ¼ teaspoon kosher salt
- 1 stick Cold Butter, Cut Into Pieces
- Fresh strawberries, blackberries, and/or raspberries
- Spray 9 x 13-inch baking pan with cooking spray. Tear bread into chunks and place in the pan.
- Mix together eggs, milk, sugar, and vanilla. Pour evenly over bread. Cover tightly and store in the fridge several hours or overnight.
- In a separate bowl, mix flour, brown sugar, cinnamon, and salt. Add butter pieces and incorporate into the dry mixture with a large fork until it resembles pebbles. Store crumb topping until you are ready to bake the french toast.
- When you're ready to bake the french toast, preheat oven to 350 degrees. Remove casserole from fridge, add fresh berries on top, and sprinkle crumb mixture over the top. Bake for 45 minutes to 1 hour, depending on your desired texture.
- Serve warm.
