It’s been one of those days- I have been meaning to sit down all day and come up with our menu plan of the week, and now here it is- 9:02 pm. I did get a lot accomplished today however, so at least I can be happy about that. This week, we have decided to take a little break from the 17 Day Diet and just focus on eating healthy (but not diet-strict) meals. This menu features a lot of recipes from Cooking Light’s April issue- as K mentioned in her Chili Mac and Cheese post, it’s a good one!
- Monday: Blackened Fish Tacos with Mango Salsa from Tidy & Thyme (mango salsa pictured above)
- Tuesday: Lemon Thyme Chicken from Annie’s Eats
- Wednesday: Pre-made Crab Cakes with Remoulade Sauce from Cooking Light
- Thursday: Garlicky Meatball Pasta from Cooking Light
- Friday: Beef Noodle Salad Bowls from The Pioneer Woman
- Saturday: Sautéed Sausage and Grapes with Broccoli Rabe from Cooking Light
- Sunday: Creamy Spring Pasta from Cooking Light

Hey! This looks similar to my menu! I am making the garlicky meatballs tonight. I am also having chipotle chicken tacos with pineapple salsa tomorrow similar to your fish tacos with mango salsa. When I was planning my menu I was so close to picking Annie’s recipe for her lemon thyme chicken too. I guess great minds/ sisters think alike!
