I had the opportunity to be a test cook for Once a Month Mom this past month and the new June menu I tested was published today. I was a test cook for the June diet menu, but there are also traditional, whole foods, gluten-free/dairy-free, vegetarian, and toddler menus available for the month. If you are not familiar with the OAMM concept, you basically cook a month of freezer meals in one day. It’s a lot of work on the day you are cooking, but it’s so nice to just pull out a delicious meal each night and just have to re-warm it.
If you can’t commit to a full day of cooking, you could always pick a few recipes you want to try. From the June diet menu, I highly recommend the zesty salmon burgers (with chipotle lime mayo), the southwest flank steak pinwheels, baked chicken and vegetable egg rolls, and the apple cinnamon muffins.

I don’t have a ton of room in my freezer but I just recently made a double batch of meatballs and froze the other half. The following week I took the meatballs out of a freezer, made some homemade sauce, and threw the meatballs into the sauce. It was so easy and the meatball were still as delicious the following week!! Next step is freezing sauce and meatballs for a double easy meal!
