Tonight my roommate and I made quesadillas. We sort of made up our own recipe as we went, but they ended up being really good!
Quesadillas
Ingredients
2 cups of fresh pineapple cut up into small cubes
1 red pepper, diced
½ green pepper, diced
¾ cup of red onion, diced
2 tbsp of cilantro, chopped
1 tsp lime juice
1 (5 oz) cooked skinless boneless chicken breast, cut up into small cubes
½ brick of pepper jack cheese, shredded
4 low carb tortillas
Salsa and sour cream
Directions
In a bowl, mix together first seven ingredients. Preheat a frying pan that can fit your tortilla, over medium heat. Spray the pan with non-stick cooking spray. Place the tortilla on the heated pan and let heat up for about 1 minute. Sprinkle 1/8 of shredded pepper jack cheese all over the tortilla and let the cheese melt (about 30 seconds to a minute). Next spread out ¼ of the chicken mixture on top of tortilla and cheese and add another 1/8 of shredded cheese on top. Lower heat a little and let the chicken mixture heat up and the bottom of the tortilla start to brown. After about 5 minutes, flip one side over the other, so that the chicken mixture is sandwiched between the tortilla. Heat each side so that they are crispy and golden brown. Then place the quesadilla on a cutting board and cut into fourths like half a pizza. Repeat 3 more times. Serve with salsa and sour cream.
*Tip- When making the quesadillas make sure not to use the lime and pineapple juice at the bottom because it will make then quesadilla soggy (just leave it in the bowl).
*B’s Tip- If you can’t wait to eat the mixture in the quesadilla, eat some with Tostitos Scoops and sprinkle with shredded cheese while you are making them.
